Chocolate Mousse

 Prep Time: 20–30 minutes, plus chilling

Servings: Serves 6

Ingredients :

200g bar dark chocolate

 2 tbsp brandy

 3 large organic egg whites

 50g / 2oz golden caster sugar

 100ml / 3\frac{1}{2} fl oz whipping cream, whipped to a soft peak

To Serve : 

 Icing sugar, for dusting

 Crisp biscuits

 

Step-by-Step Instructions :

  1. Melt the Chocolate: Chop 150g/5oz of the chocolate and place it in a bowl over a pan of hot water. Take the pan off the heat, but keep the bowl over the water and stir in the brandy. Grate the remaining chocolate and set aside.
  2. Make the Meringue: Whisk the egg whites to stiff peaks, then whisk in the sugar a spoonful at a time to make a glossy meringue. Take the chocolate mixture off the pan and fold in a heaped tablespoon of the meringue, then tip the chocolate mixture into the meringue and fold in lightly but thoroughly.
  3. Combine and Chill: Now fold in the cream and two-thirds of the grated chocolate. Divide among six small glasses or cups and chill for 2 hours, or overnight.
  4. Serve: Serve sprinkled with the remaining grated chocolate and icing sugar, with a biscuit tucked alongside.

⚠️ Note from the recipe: This mousse contains raw egg whites, which should be avoided by those in vulnerable groups.
