Chocolate Mousse

Prep Time: 20–30 minutes, plus chilling
Servings: Serves 6
Ingredients :
200g bar dark chocolate
2 tbsp brandy
3 large organic egg whites
50g / 2oz golden caster sugar
100ml / 3\frac{1}{2} fl oz whipping cream, whipped to a soft peak
To Serve :
Icing sugar, for dusting
Crisp biscuits

Step-by-Step Instructions :
- Melt the Chocolate: Chop 150g/5oz of the chocolate and place it in a bowl over a pan of hot water. Take the pan off the heat, but keep the bowl over the water and stir in the brandy. Grate the remaining chocolate and set aside.
- Make the Meringue: Whisk the egg whites to stiff peaks, then whisk in the sugar a spoonful at a time to make a glossy meringue. Take the chocolate mixture off the pan and fold in a heaped tablespoon of the meringue, then tip the chocolate mixture into the meringue and fold in lightly but thoroughly.
- Combine and Chill: Now fold in the cream and two-thirds of the grated chocolate. Divide among six small glasses or cups and chill for 2 hours, or overnight.
- Serve: Serve sprinkled with the remaining grated chocolate and icing sugar, with a biscuit tucked alongside.
